1 dozen Rolling Hills Farm eggs (cracked and beaten)

1/2 cup  milk or cream

1 lb. cooked Rolling Hills Farm Sausage

1 cup sliced mushrooms

1 small onion - chopped or sliced

3 T butter 

4 cups of shredded cheese (swiss or mozzarella)

2 uncooked pie crust (or make your own)

Preheat oven to 350.

Wisk milk/cream into beaten eggs.  

Saute onion and mushrooms in butter.  Put sausage and sauteed veggies  (half in each shell) in uncooked pie shells.  Pour egg mixture into each pie shell.  Top with cheese.

Bake for 40-45 min. or until knife inserted in center comes out clean.  

(Feel free to add your favorite breakfast meats and veggies to make this your own!!)

 Rolling Hills Farm Pork Steaks

1 can of pineapple chunks (reserve juice)

1 Green Pepper - sliced/ chopped 

1 Onion - sliced/ chopped

1 t ginger

1/2 t garlic 

salt and pepper to season steaks 

2 T corn starch (mix with 1/4 cup warm water)

Cooked white rice

Skillet cook steaks until browned and cooked through.  

Mix juice of pineapple in a sauce pan until light boil.  Add starch mixture to thicken. Add ginger, garlic and  pineapple chunks.  

Serve ham steaks on a bed of rice - top with onion & green pepper and pour pineapple sauce over the top.

1 Pork Shoulder Roast

6 whole garlic cloves

salt & pepper to taste

4 large potatoes

1 T virgin olive oil

Set your pork in the Crock Pot Fat side up.  Make cuts 1- inch apart and stuff with garlic cloves.  Salt and pepper to taste.  Cook for 2 hours to 2-1/2 hours.  While pork is cooking, slice potatoes into wedges and place on baking sheet. Drizzle with Olive Oil.  Sprinkle with salt, pepper or your favorite spices.  Bake at 400 for 45-55 min. or until cooked as you like them (less for tender - more for crispy).

 1 or 2  Pork Roasts  (depending on the amount of BBQ you would like) 1 roast will give you an average of 2-21/2# of BBQ (or more) and two roasts will give you double that amount.

Cook your pork roast in the Crock Pot for 4-6 hours on LOW or 3-3 hours on HIGH.  Remove the roast and place to rest in a serving bowl.  When cool enough to touch (or use tongs) pull apart pork and eliminate any fat or bones.  

Add your favorite BBQ sauce to the pulled pork (or ask me for my home made Rolling Hills Farm BBQ Sauce).

Some fresh canned dill or sweet pickles would make this perfect!!

 2 pounds Rolling Hills Farm ground beef

2 pounds Rolling Hills Farm ground pork

1 medium onion chopped

2 eggs slightly beaten

2 t salt

2 t pepper (or to taste)

3 hard boiled eggs (cooked peeled, set aside) - feel free to be creative and add anything you would like to see in your sliced meatloaf like mushrooms, green peppers, yellow peppers, red peppers, spinach....

Preheat oven to 375

Mix all ingredients (EXCEPT HARD BOILED EGGS) large mixing bowl by hand.  Once mixed well form loaf in a glass/metal 9X13 baking pan.  Remove top half of meatloaf and lay the three hard boiled eggs down the center (as in picture).  Cover the eggs and reform loaf.  Cover lightly with foil before cooking.

Cook for 21/2 to 3 hours.  

The leftovers make the best meatloaf sandwich!!  Rod and I have also frozen our leftover meatloaf in single servings.  ENJOY!!

One head of cabbage (boiled whole for 20 min. then set aside to drain and cool)

1 pound of ground beef OR 1 pound of ground sausage  (for a delicious taste mix a bit of both!!!)

1 1/2 C cooked brown rice (or rice of your choice

1 small chopped onion

1 egg (beaten slightly)

1 large can of chopped tomato with juice

When you can handle the cabbage, peel off leaves and make a pile.  In a large mixing bowl combine chosen meat, cooked rice, chopped onion and beaten egg.  Mix well.  Roll a small hand full of meat in a cabbage leaf and place in a 9X13 glass/metal baking pan.  Tuck them one after another making rows and then start another until you have two full rows.  Pour your can of tomato w/ juice over the top and cover pan with foil.

Cook at 375 for 45 minutes.  

 4 Pack of Rolling Hills Farm Pork Chops (brown them lightly on both sides over med-high heat using salt)

1 Cup of brown sugar

3 teaspoons cinnamon

1/2 teaspoon salt (for browning above)

3 apples cored and sliced (I keep skin/peel ON - you can peel your apples if you prefer)

Put browned pork chops in the Crock Pot and top with sliced apples, brown sugar, and cinnamon.

Cook on High for 3 hours or Low for 5 hours in Crock Pot.

**Rod also loves it when I cook a pork roast in the same way (instead of pork chops use a pork roast)!
